Allister arrived in South West Wales in early 2016 coming from 2 Michelin Starred Gidleigh Park where he was Head Chef for 3 years under the legendary Michael Caines. Allister worked for Michael for 8 years and having been moulded by one of the best chefs in the UK he is now focused on firmly establishing himself on the Welsh food scene.
Allister has a distinctive modern style with a delicate touch of the unexpected. Taking influence from both classic and modern techniques he focuses on extracting full and exciting flavours from every ingredient on the plate. His elegant thoughtful approach to cooking and plating his food ensures that everything has its place to deliver his accomplished cuisine.
Allister is blessed to have large kitchen and herb gardens at the Grove which supplies the majority of his vegetables and herbs. There is also a rich bounty of wild pickings within and around the grounds including sorrel, pennywort, wild garlic and summer fruits together with wild mushrooms from Canaston Woods just a stone’s throw from the restaurant. His commitment to earth to plate has also inspired him to work with renowned Pembrokeshire based forger Yun Hider.
Yun is Britain's foremost forager celebrating 20 years’ experience working with a large number of Michelin starred chefs across the UK.
Allister was delighted to be recommended in the Good Food Guide in 2017 with a cooking score of 6, together with retaining Grove’s 3 AA Rosettes. His culinary journey continues.
